August 6- Yummy


I had to get a video of the kids eating their dinner tonight…guacamole, seaweed wraps, and grapes. Sounds like a horrible combination, huh? But they loved it. I’ll have to keep this video around for when they’re teenagers and refuse to eat anything but pizza and McDonalds, to remind them that once upon a time hey liked to eat sheets of sea weed. I swear, my kids have the most bizarre taste buds ever.

I wanted to include the recipe for the guacamole the kids were eating. It was sooooo yummy, so I have to share. It's a recipe from Deep South Parties by Robert St. John.

Mega Guacamole

1 tsp fresh lemon juice
1 Tbl fresh lime juice
1/2 tsp minced garlic
1 1/2 tsp kosher salt
1 tsp black pepper
1 tsp hot sauce (I omitted this)
1 Tbl sour cream
4 ripe avocados
1/2 cup red onion, finely chopped
1 Tbl cilantro, finely chopped
1/2 cup tomato, seeds removed, small dice

Combine the lemon and lime juice, garlic, salt, pepper, hot sauce, and sour cream and blend together well. Remove the skin and seeds from the avocados and rough chop the pulp. Quickly fold the avacado pulp into the citrus mixture. Fold in the remaining ingredients.
